Food Match: A truely great dessert wine!

A light ruby color with elegant pale golden tinges, Vin Santo Occhio di Pernice expresses itself in a nose with a bouquet of great breadth and complexity, with hints of dried fruit, honey and various spices. It is a unique great wine, made of grapes from the best clusters and south-facing land, hand-picked to ensure its classic warm, mouth-filling mellow taste with a long lingering finish. Naturally dried on mats for 4 months, it has a very slow fermentation that follows the seasons, stopping in winter to begin again in the warmth of spring, providing the defining
structure and aroma of a great wine.

Wine production in Poggio Bonelli has been carried on since the 16th century. Sought after by the most prestigious noble families of Siena, the Poggio Bonelli estate was run by different owners in the course of the centuries. Poggio Bonelli is part of a big property (including the Chigi Saracini Farm) owned by the third largest bank in Italy (Monte dei Paschi di Siena – MPS), through the farm company called MPS Tenimenti. The property consists of 2300 acres of land (most are arable lands and olive plants).

The Terroir of Castelnuovo Berardenga helps in producing wines that tend to be most ripe and richest  tasting, differently from other areas of the Chianti Classico where wines could have a very delicate aroma  and flavour, or characterized by their structure, firm tannins and concentrated flavours.

Temperatures are 1 /1,5 degree Celsius (average) higher than in the northern part (close to Florence) and the soil is mainly characterized by some tuff and clay components with underneath a rock skeleton part.
