Style:

Delicate vegetal flavors mingle with ripe plum and balmy scents, ripe tannins, fine and caressing to taste.

Food Match: Nicely paired with stewed meat, shellfish, seasoned cheese, wild boar and polenta.

Good acidity makes it suitable for everyday consumption and helps its aptitude for ageing. Cabernet Sauvignon strengthens its structure and Merlot gives it greater smoothness.

"Cabernet Franc is the most suitable Bordeaux grape variety to the Maremma terroir. The grapes have been fermented in open top barriques and processed in a purely traditional way. Its delicate vegetal flavors mingle with ripe plum and balmy scents. This wine has ripe tannins, fine and caressing to taste. The acidity, strongly present, makes it suitable for everyday comsumption and helps its aptitude for ageing. Cabernet Sauvignon completes this wine’s blending to strengthen its structure along with Merlot, which gives it a greater smoothness".

Soil: consisting of stone (galestro) for Cabernets, clay-sandy for Merlot
Harvest: hand-harvesting. Time of year: (Merlot) 14th September, (Cabernet Sauvignon and Cabernet Franc) 2nd and 10th October
Wine making process: pre-ferment maceration at 8°C for two days. Early fermentation in open top barriques. Daily crushing by hand to extract aromas, colors and structure
Skin contact: 15 days
Malolactic fermentation: in wood
Barrel Maturation: 20 months, of which 1/3 in barriques, 1/3 in tonneau, 1/3 in big oak cask. 6 months of bottle aging later on

Frank & Serafico have at their disposal grapes coming from different production areas of the Tuscan Maremma. With regard to the white grapes, these vineyards are inside the Maremma Nature Reserve and the countryside of Magliano in Toscana. The soil in these areas contains a high percentage of sand, which is ideal for giving aromas and freshness to the wine. The red grapes come from Morellino di Scansano and Montecucco areas. These are stoney soils and the grapes acquire splendid ageing qualities. Our goal is to express the best of the terroirs of the Maremma, carefully producing wine using grapes having different features and potentialities.
